Making Calamari is much easier than you might think and so delicious as a snack!
1 kg. squid
235 ml coconut milk
550 gr (gluten free) flour
100 gr yellow corn flour
1 tbsp. SPICE BLEND OF THE CARIBBEAN
½ tbsp. fresh coarse black pepper
1 l. vegetable oil (coconut or rapeseed)
2-3 lime wedges per person
The Dip Sauce:
MANGO HABANERO / JALAPEÑO / CAYENNE mixed with mayonnaise or similar, to taste
Heat oil to 180-190 C
Rinse and dry squid, cut into rings.
Mix flour, corn flour, PICE BLEND OF THE CARIBBEAN and black pepper
In a seperate bowl mix coconut milk and egg and add the squid. Let sit for 15 min.
Toss squid in flour mix and place in deep fryer for 1-3 min. Do a little at a time.
Place on paper towels to dry and place in a bowl with lime wedges.

Fantastic with a side of home made french fries!
