JAMAICAN JERK CHICKEN

JERK CHICKEN WILD FIRE

Preperation Time: 2 hours - 2 days
Cooking time:
1,5 hours for whole chicken
45 min for wings, thighs and drumsticks
4-6 Persons or more!

Real Caribbean Jerk Chicken is something everyone should experience during their lifetime, and here is one recipe that is sure to tick that box!

The items:
2 kg chicken, whole, thighs, drumsticks or what you like
100-200 ml JERK MARINADE
5 tbsp. SPICE BLEND OF THE CARIBBEAN
3 lime wedges per person
fresh Thyme or parsley for garnish
Salad (lettuce, tomatoes, cucumber)
Jasmin rice
Black Eyed Peas (optional and recommended)

The action:
Preheat smoker or oven to 160 C, or start grill.
Cut chicken into pieces, rub with SPICE BLEND OF THE CARIBBEAN, let rest for 4-5 min.
With a spoon and rubber gloves, rub chicken with the JERK MARINADE generously.
Place in fridge for 2 hours - 2 days (the longer the better)
Place in smoker or oven, or on the grill, and cook until done / 75 C internal temp

The servings:
This is quite HOT, so serve with rice (and beans) and a fresh salad. Make sure to have lime wedges that you can squeeze over the chicken as you eat to balance the hotness. It's also great with JERK BBQ SAUCE as a dip sauce, straight from the fridge.

The Hot tip:
JERK MARINADE works wonders on almost everything; Goat, Fish, Lamb, Veggies...

If you bake this in the oven, mix the drippings with creme fraiche or similar for a wonderful sauce!
