Baked beans are the perfect comfort food, either as the main, as a side or as a filling for mexican food.
500 ml dry white beans
500 ml water
2 tbsp. vegetable oil
1 chopped white onion
1 tbsp. butter
250 ml brown sugar
150 ml. ORIGINAL BBQ SAUCE
2 tbsp. yellow mustard
2 tbsp. pure maple syrup
5 slices bacon
1 chopped red paprika (optional)
1 chopped fresh red chilipepper (optional)
Preheat smoker or oven to 160 C
Bring beans, water and oil to a boil in a covered pot for two minutes,
Remove from heat and let stand covered for one hour.
Return beans to boil, reduce heat and simmer for 10 minutes.
Drain beans, reserving 350 ml of liquid. Cook onions with butter until slightly browned, add chopped paprika and chili peppers.
Combine beans with liquid, onion mix, brown sugar, mustard, ORIGINAL BBQ SAUCE, maple syrup and raw bacon in a 2-liter casserole or cast iron pot.
Place in oven or smoker for 3 hours stirring every hour.
Eat as a main dish, a side dish,
use in a burrito, taco, salad, fill into a paprika or other.
