Roasted Chicken

Roasted chicken is easy to make comfort food, practically making itself with all the sides needed in one pot. Any leftovers can be used in chicken salad, tacos or similar. Please make sure the chicken is ecological and free range.

The items:
4-6 tbsp. butter
4 carrots
2 chopped onions
3-4 celery stalks
3 potatoes
2 cups of water

The action:
Preheat oven / smoker to 200 C

Cut all the vegetables into large pieces and place in a large roasting pan, add the water.
Mix half the SPICE BLEND OF THE HARVEST with the butter, rub all over and inside the chicken and put some under the skin as well for extra crispy skin. Sprinkle the other half all over.
Place the chicken on top pf the vegetables, cover with aluminum and foil and cook for 2 hours. Remove foil and cook for another 20 min. or until golden brown. Make sure core temperature is 75 C.

The servings:
Serve with the vegetables. You can mix the drippings with sour cream or similar, to taste.

The Hot tip:
You can add more / exchange the vegetables such as tomatoes, lemons, asparagus, peas, bell peppers, garlic, apples, oranges and mushrooms. You can also add some fresh chopped chili to the vegetables.
