SOUTHERN STYLE GREENS

Greens are a beloved staple in American cuisine, it comes in many different types; Collard, Poke and Turnip greens... Use whatever greens you have at hand and you will have a very healthy and tasty dish!
500 gr smoked pork cut to cubes, turkey cut to pieces, ham hocks (trotters) or other meat.
1-2 chillies or 1/2 tsp. crushed red chilli peppers
3 cloves of minced garlic
1 kg fresh greens
1 onion, chopped
2 celery stocks, chopped
1 small red paprika, chopped
2 1/2 tbsp. sugar
6 tbsp. Olive oil
1 1/2 liter water
2 tsp. salt
2 tsp. pepper
2 tbsp. SPICE BLEND OF THE AMERICAS
1 cup red wine
2 cubes bullion
Pour olive oil in large pot.
Add meat and fry to sealed and slightly crispy.
Add onions, celery, paprika, garlic and let cook for 10 minutes.
Add water and bring to boil for 30 minutes. Cut the stalks off the greens, wash 2 times in cold water. Rinse well. Cut the greens to strips, add to water after the 30 minutes is up. Then add spices, wine (take a sip and do a little dance), sugar, salt, pepper and continue to boil for 15 minutes. Turn down the heat and cook for 45-60 minutes.
With corn bread or other breads or rolls.
Garnish with spring onions and fresh chopped chili.
