MEXICAN BURRITOS

Burritos are the perfect food on the go, for mingle parties or just when you want some really tasty comfort food.

The items:
1 kg ground or shredded beef or pork or chicken, shrimp or go vegetarian.
1 can of 400 gr Kidney beans
3 tbsp. coconut or other cooking oil
3 tbsp. water
1 onion, chopped
3 tomatoes, chopped
1 red paprika, chopped
1 head of lettuce, chopped
2 avocados, chopped
150 gr coriander
2 tbsp. JALAPEÑO HOT SAUCE 
1/2 container of 300 gr lactose free sour cream
2 tbsp. SPICE BLEND OF MEXICO
4 tbsp. cumin
pickled chili peppers
1 package feta cheese
1 lime
1 package extra large tortillas

The action:
If you use meat or seafood: Pour oil in large skillet.
Stir in the meat, add 2 tbsp cumin and 2 tbsp. SPICE BLEND OF MEXICO after it's fried.
Add water and cook for 3 minutes, set aside.

Chop all vegetables. Set aside in separate bowls.
Mix 2 tbsp JALAPEÑO HOT SAUCE with half a container sour cream.

Pour oil in large skillet (same as before). Pour in the kidney beans including the water. Add 2 tbsp. cumin. Bring to a boil, turn the heat down to medium heat and cook for 10 minutes. Mash the beans until smooth.

The servings:
Spread with the fried beans on half the tortilla. Add salad, paprika, meat. Then add onions, tomatoes, avocado, JALAPEÑO HOT SAUCE mixed with sour cream, feta cheese, coriander and pickled chili peppers if you want it hot. Squeese lime on it, this also cuts the heat of the chilies.

The Hot tips:
We like the 30 cm large tortillas for this dish, you can find them in specialty stores, but regular ones work too, just put less in them :). The burritos are also very good and filling with cooked rice
