MAMARIAS PASTA SAUCE

8-10 Persons

Pasta sauce is great for vegetarians and carnivores alike!

The items:
600 ml olive oil
600 ml yellow onions, chopped
1 of each large red, green and yellow paprika, chopped
4-5 cloves garlic, finely chopped
1 aubergine, diced
1 zucchini, diced
3 cans of 400 gr chopped tomatoes
4 tbsp. tomato puree
2 beef, vegetable or other bouillon cubes
1 kg minced lamb (can be beef, pork, poultry or toasted tofu)
5 strips bacon (unless you go vegetarian)
2 tbsp. SPICE BLEND OF THE AMERICAS
4 tbsp. dried oregano
2 bay leaves
3 tbsp. paprika powder
1 tbsp. thyme
1 tbsp. basil
2 tsp. Salt
Pepper to taste
225 ml red wine
225 ml water

The action:
Pour olive oil in large pot.
Fry the chopped bacon for 5 minutes (or skip if going vegetarian).
Add onions, let cook for 5 minutes until they're transparent.

Add the minced meat to the pot (unless you do the tofu, then roast this on the side to be added at the very end)
Add garlic and chopped paprika. Simmer for 8-10 minutes on low heat.
Add oregano, thyme, basil, paprika powder, bay leaves and bouillon. 
Add the red wine, take a sip and do a little dance :)

Add tomatoes, simmer for 3-4 minutes then add the tomato paste.
Add 225 ml water and let simmer for 15 minutes
Add the SPICE BLEND OF THE AMERICAS
Add the zucchini and aubergine, salt and pepper to taste.
Let cook for 30-60 minutes, the longer the better, on very low heat.
If you chose tofu, add this to the sauce the very last minute or use as a garnish.

The serving:
With your favourite pasta, garlic bread or other bread.
Garnish with parmesan or other cheese if you want, perhaps some fresh basil, oregano or cherry tomatoes.

The Hot tip:
Make a big batch, freeze and use later for pastas, lasagnas and grilled cheese sandwiches!
