PULLED PORK TACOS

Get creative with this versatile recipe and take your tacos to new heights!

The items:
2-3 kg free range pork neck
5 tbsp. SPICE BLEND OF THE AMERICAS 
or SPICE BLEND OF MEXICO
4 tbsp. olive oil
Taco shells, we recommend soft white corn tortillas

The Spray mix:
250 ml apple juice
1 can beer

The garnishes:
1 small chopped onion
1 chopped red paprika
2 chopped tomatoes
2 avocados
2 limes wedges per person
canned corn (optional)
cabbage / salad of choice
1 bunch chopped coriander
200 gr of your favourite cheese (optional)

The dressing:
250 ml sour cream or similar (optional)
100 ml JALAPEÑO / MANGO HABANERO HOT SAUCE

The action:
Preheat your smoker / oven to 110 C.
Rub the pork with oil, spray the mix and rub SPICE BLEND OF THE AMERICAS / SPICE BLEND OF MEXICOall over, preferably twice.
Place in smoker / oven and spray every hour.
After approx. 4.5 hours / 68-74 C internal temp. spray lots and wrap up in 2-layers of alu foil.
Place back in smoker and raise temp to 130 C for the remaining time, approx. 3 hours until internal temperature is 96 C in the thickest part of the pork.

It can take between 8-10 hours depending on the size of the pork. Pull or shred the pork. 

While pork is resting, chop garnishes and place in individual bowls.

The servings:
This mix as much JALAPEÑO / MANGO HABANERO HOT SAUCE as you like with sour cream, mayo or similar and set in fridge till ready to serve, or use as is if you like the fresh kick!

The Hot tip:
You can also use nachos instead of tortillas and make this pulled pork nachos!
Also, some people swear to eat this with ORIGINAL BBQ SAUCE
